Bright, herby, buttery — the kind of pasta you make on a Wednesday and remember all week.

Method
Bring a generous pot of salted water to a boil. Cook the pasta until just al dente.
While it cooks, warm the olive oil and butter in a wide pan over low heat with the garlic — do not let it colour.
Add the lemon zest and a ladle of pasta water. Swirl into a silky sauce.
Drain the pasta, reserving a little more of the cooking water, and tumble it into the pan.
Toss with the lemon juice, basil and parsley. Loosen with pasta water if needed.
Serve at once with plenty of parmesan and cracked pepper.
A little note
A glass of something cold and crisp is not required, but it is encouraged.
